Helloooo friends! Today I thought I’d do something a little different than my usual beauty/lifestyle post. As you can see by the title, I’m going to be testing this recipe from Buzzfeed Tasty – 2 Ingredient Ice Cream bread. It seems too good to be true – just mix a pint of ice cream and 1 1/4 cups self rising flour together, bake it, and BAM! Delicious, sweet bread. That couldn’t possibly work, could it? Let’s find out.
First you need to melt the ice cream. I guess you could just leave it on the counter for while, but I microwaved it for 45 seconds. This is coffee toffee flavor! 😍
Next add in your flour a spoonful at a time to make sure there’s no lumps. After the flour was all combined, I added a few dark chocolate chips to make it extra delicious. You can never go wrong with chocolate.
Grease and line a loaf pan with parchment paper, then smooth out your batter. It’s super sticky, so it’s kind of hard to get an even layer. Pop it in a 350° oven for 35-40 minutes. Keep an eye on it to make sure it doesn’t overcook!

I took it out right at 35 minutes, and it was perfectly cooked! Not the prettiest thing I’ve ever seen, but it definitely looks like bread. It puffed up quite a bit.
The consensus is….drum roll please….
I will be making this on a regular basis. It’s so good!!
The texture resembles a scone or a muffin – a little bit dry, but not overly so. It’s not too sweet, surprisingly. I’m so impressed with this recipe!
